I was contacted by Cecille a few months ago about the idea of doing Mickey Mouse cupcakes for her son’s first birthday. I searched and searched and found these three inspiring pictures:

We had also talked about a smash cake for Eric and I thought it would be awesome to have a big cake to match the cupcakes. I normally do not make cakes, but I wanted the challenge and thought for weeks how I was going to make it…it was harder than I imagined. I used a dome cake pan to give me the perfect hemisphere on top so I didn’t have to worry about carving. The ear’s are actually sugar cookies for stability. I wrote Eric’s name just like they do on the hats at Disneyland.
The cupcakes were harder to make than I thought. I made all the hats a week before so they would harden. The bows are actually made from fondant stars! The best “glue” to add the ears was royal icing.
Overall, it was really fun to make and I was just happy to be a part of Eric’s First Birthday.
